How to become a food scientist

A food scientist develops and tests food products and makes sure they are safe and stable. A bachelor's degree in food science is usually enough to start, and most jobs are in food manufacturing. It is one of the more direct routes from a science degree to a job.

BLS calls this group "food scientists and technologists".

What the work looks like

Days move between the lab, the pilot plant and production lines, with plenty of work on shelf life, formulation, flavor and regulation.

The official O*NET job description lists tasks such as:

  • Inspect food processing areas to ensure compliance with government regulations and standards for sanitation, safety, quality, and waste management.
  • Check raw ingredients for maturity or stability for processing, and finished products for safety, quality, and nutritional value.
  • Study methods to improve aspects of foods, such as chemical composition, flavor, color, texture, nutritional value, and convenience.

The route in

  1. Major in food science, or in chemistry or biology with food courses.
  2. Do an internship with a food manufacturer.
  3. Learn food safety and quality systems.
  4. Add a master's if you want to move into research and development.
The catch. Few people know this field exists, which helps you: it has fewer applicants than the better-known sciences, but jobs cluster near manufacturing regions.

Pay in the US

The May 2025 national figures for food scientists and technologists run from $52,920 at the 10th percentile to $145,280 at the 90th, with a median of $88,720 and a mean of $95,360. BLS projects employment growth of 6% over 2025-35 (faster than average), with about 2,700 openings a year.

If you do a PhD in this area

In 2025 the median research doctorate recipient in agricultural sciences and natural resources took 8.6 years from bachelor's degree, 7.0 years from starting graduate school and 5.0 years from starting the doctoral program.

In 2025, of 1,325 research doctorate recipients in agricultural sciences and natural resources, 816 reported a definite postgraduation commitment and 368 of those were postdoctoral study positions in the United States. That is 45.1% of those with a commitment.

In the UK

UK food science degrees are offered at a limited number of universities, and food manufacturers run graduate schemes.
